How was your week, here it is so cold and rainy, yes it has been continuously raining for two days. So we did our shopping on Saturday and rest of the shopping was done by hubby during Sunday and Monday. While coming back in the car, my daughter asked for cupcakes or muppins (muffins). I told her I will make apple muffins for her. She got extremely happy and even tried to help make the muffins. I made apple muffins with granny smith apples.
If you ask me what the difference between muffins and cupcakes is, I have discussed it in this post here in Three cheese carrot bell pepper savory cupcakes. One thing I found that, there is no frosting in a muffins. Yes that is the uniqueness of a cupcake. This apple muffin is quite easy to make and only need few granny smith apples. Yes they survive the baking very well. You can also use Gala, Braeburn, Rome, Jon Gold, Honey Crisp, and SweeTango apples in these muffins. I added chopped apple into them. If you don’t like chopped apple in your muffins, you can even grate and add to them.
The most important spice you need to add to this muffin is cinnamon and ground ginger, yes apple and cinnamon goes well together. For this recipe along with apples, flour, sugar, cinnamon and vanilla, you’ll just need some butter, milk, baking powder, salt, and eggs. If you don’t have any eggs in your recipe try to add some apple sauce or apple butter.
I adapted the recipe from here, I skipped the cinnamon sugar topping, thought it will increase the sugar content of the recipe. My daughter and son enjoyed them; it is such a delight to see those peeking apple pieces in each muffin. I used cupcake liner so that my kids can handle them, you can skip that part and just grease the muffin tin itself. This apple muffins is in a must try at least one time category. You are going to love them to the core.
