In my house full-fledged breakfast happens only on weekends, rest of days, something like slice of whole wheat bread, oatmeal or cornflakes. I make elaborate breakfast on weekends, mostly south Indian dishes; nowadays my princess is in love with pancakes, and she wants pancakes and sauce (maple syrup) for her breakfast. Previously I had made sweet potato pancakes which she loved, so when she asked for a blueberry pancake, I made this multigrain blueberry pancake.
This great recipe is from the book “A good food day” by Macro Canora. I got this complimentary copy to review from blogging for books. Author Macro is a professional chef who turned a new leaf of cooking healthy ingredients once he developed pre diabetic diagnosis.
The book is really simple with lot of information and nice photography. It starts with personnel story of the author followed by 10 principles of good food day and pantry staples then myth about saturated fat like butter cheese etc.
Book is divided into 1) Breakfast, which includes, smoothies, pancakes, eggs, muffins etc. 2) Salads with warm, roasted and cold salads.3) Vegetables with sweet pepper peperonata is on my do list. Romesco sauce also sounds interesting. 4) Beans and lentils, my favorite section, as without them I don’t think I can cook anything. Warm lentil salad is delicious. 5) Great grains, which has quinoa, faro, whole wheat, bulgur wheat recipes. 6) Fish recipes with salmon, pan-fried flounder looks good. 7) Meat and poultry section starting with making chicken broth to ginger scallion turkey burgers and pork medallion with fennel white wine sauce. 8) Snacks with spiced pumpkin seeds, 3 types of granola, curry and lime cashews, pecan powder balls are few. And finally 9) Sweets, with cookies, blueberry pie, olive oil cake, Hazelnut brownies etc.
One thing is that this book includes simple recipes which you can easily make at home. You don’t need to purchase any exotic ingredients. Also there is use of virgin coconut oil in the recipes. One drawback I found that it is not a book which helps you with weight loss with magic tips or recipes. If you take care of your health and do regular exercise, then this book helps you to make some healthy dishes. If you intend to start healthy regime, then this book can help you.
I tried Blueberry and buckwheat buttermilk pan cakes from the book. It is delicious; my hubby told me you need an acquired taste to like it. Yes it has multigrain flour in it such as buckwheat flour, whole wheat flour and corn flour, instead of frozen blueberries suggested in the recipe I used fresh blueberries. It has both buttermilk and milk along with eggs. My daughter enjoyed with heavy dose of maple syrup, where her dad eat with little maple syrup. I think this pancake is really filling one so if you have only 2 adults, then half or ¾th the recipe is enough. Maximum pancakes you can eat are about 2-3.
