Normally I make smoothie with milk or yogurt or some time just with water. Also occasionally I add some almond or chia seed to smoothie. I don’t like to make the same recipe every day. So I am in search of different smoothie recipes and also I want to sweeten my smoothie this time.
I tried making this vegan strawberry cashew smoothie with fresh strawberries, banana and soaked raw cashews and Nectevia with Stevia, (a agave sweetener combined with Steviva), which I received a sample from Stevia as part of Stevia blogger recipe challenge. As my hubby is diabetic, most of the time I skip adding sweeteners in the dishes or add some Stevia. He will always remind me that sugar is dangerous for him.
You need to soak the cashews, which is the only hard part in the recipe. If you want you can use cashew milk but I prefer soaking and grinding my own raw cashews. I used a ripe banana in this recipe. Both cashews and strawberries along with banana and Nectevia make a delicious drink. This is another great morning smoothie to start a day or have it as a after workout smoothie. Since Nectevia with only 1/4 the calories, carbohydrates and sugars of regular agave, or table sugar, you need to use only a small quantity. I like that part.
Even though cashews are low fiber nut, it is packed with vitamins, minerals and antioxidants. These include vitamins E, K, and B6, along with minerals like copper, phosphorus, zinc, magnesium, iron, and selenium, all of which are important for maintaining good bodily function. We Indians love them and always enjoy it as snacks, or add it in the desserts, rice or to thicken the curries.
I used fresh strawberries as I won’t get this privilege as strawberry season is going to end soon.
Here comes the simple yet creamy smoothie with 5 ingredients, why wait, whip up some and enjoy.
- 11/2 cups strawberries hulled and chopped
- 1 medium banana
- ¼ cup soaked cashew nuts you need to soak at least 3-4 hours or overnight
- ½ tablespoon vanilla extract
- ½ tablespoon Nectevia with steviva you can increase to 1 tablespoon
- 1 -1 ¼ cup water
Process everything in a blender and enjoy.
