This dish has grilled chicken, black beans, and roasted veggies served with brown rice, a flavorful green chili lime sauce, and Monterey Jack cheese. Regarding White Wine Chicken with Couscous: it has chicken with roasted zucchini, eggplant and onions and tomatoes served with couscous and a lightly toasted wine sauce. I like to serve that one with a simple tomato walnut salad. It pairs really well with each other and makes it a perfect meal by itself.
