Carrot Fries
Ingredients
- 1 pound of carrots
- Cooking spray
- Salt and pepper to taste
Instructions
- Preheat oven to 400ºF.
- Peel the carrots and cut them into strips about in ¼-inch thick and about 3 inch long.
- Line baking sheet with aluminum foil and coat with cooking spray and spread the carrots onto it. Sprinkle with salt and pepper.
- Bake for 15 minutes. Flip them over and coat them with a bit more cooking spray, salt and pepper if need and continue to bake for 15 minutes until lightly browned.

So many people suffer from Type 2 Diabetes, I have several members of my family that do. You're right to focus on healthy eating. Having read the studies, as a former pharma rep, I know that what you eat is 80% of your health quotient. Eating whole foods, maintaining a normal weight and getting daily excercise go a long way toward good health. It can't be overstated. Your carrot fries are a great snacking idea!
