I never liked Coke that much, but do like to drink Sprite occasionally; however my kids are fan of both drinks. They want Sprite to go with pizza and French fries to go with Coke. While grazing a local magazine, I found this Coca Cola cupcake with Coca Cola icing. Even last week when I went in for a routine cleaning of teeth in my dentist’s office, in the waiting room I was looking at a recipe in a magazine and thought it was interesting. Maybe being a food blogger, I have an eye to look for interesting recipes.
I made this coca cola cupcake with coca cola icing this thanksgiving, earlier planned for a pumpkin cheese cake which I dropped it. This recipe is adapted from here. It is really simple and easy to put together. I increased the coke amount and also made only 9 cupcakes. It needs all purpose flour, cocoa powder butter, brown sugar, buttermilk, vanilla extract and eggs. The addition of coke made the cupcakes made it more like fudgy touch also icing gave more chocolate flavor to it.
The cupcake itself is less sweet and you can have it as such. But If you want a little sweet touch, try this icing, it makes the cupcake more delectable.
Trust me at first I was not sure how Coke is going to behave in cupcake, it turned out be delicious. I had earlier tried beer in a quick bread, which I loved it. I am planning to make a potato beer soup if I get the time in the coming weeks. Maybe some time experiments will turn out delicious, and at times a complete flop. Still from each failure I learn something, even though at time complete flops are expensive.
This cupcake is really festive so give it try, frosting is almost like a glaze when you top it with Maraschino cherries it is complete. Give it try you will love it.
Delicious moist cupcake with coke lightly sweetened cupcakes double its flavor when it is frosted with Coca cola icing.
Ingredients
- ¾ cups brown sugar
- 1 ¼ cups all purpose flour/ Maida
- ½ sticks/ 8 tablespoons butter softened at room temperature
- 1 ½ tablespoon unsweetened cocoa powder
- ¼ cup butter milk
- 1 egg
- ½ teaspoon baking soda
- ½ teaspoon vanilla extract
- ⅓ cup coca cola
- 1 cup confectioner’s sugar
- ⅛ teaspoon salt
- ½ tablespoon unsweetened cocoa powder
- ⅛ cup ( 2 tablespoon of coca cola) as needed
Instructions
- Preheat oven to 350F. Line a muffin tin with 9 cup liners, also grease them lightly. Set aside
- In a bowl mix all the dry ingredients and set aside.
- In a bowl of kitchen aid stand mixer cream the butter and brown sugar,
- then add egg and mix well once again.
- To this add butter milk and mix once again. To this add dry ingredients in two additions.
- Then increase the speed so that everything combines well and becomes smooth.
- While mixer is running add coca cola and vanilla extract to the batter
- and mix just until everything is combined well. Do not over mix.
- Pour ¼ cup batter about ¾th of prepared muffin tin,
- bake it in preheated oven for 35 minutes or until a tooth pick inserted in the center comes out clean.
- Cool completely dust with powdered sugar or frost.
- In a large bowl sift confectioner’s sugar, salt, and cocoa powder
- With a wire whisk slowly add enough coke to make a paste. Add more sugar or coke depending upon the consistency you want.

I wonder if this is like coco cola cake. I first heard of it when I was living in the south, but I never tried it. These cupcakes look so very moist and being a lover of coco cola, I bet it was great in these chocolate cupcakes. what a fun recipe!
