Delicious coconut ladoo or coconut fudge ball made with desiccated coconut , condensed milk , cardamom and touch of vanilla extractSome sweets have nostalgic effect on you. Yes most of Indian sweets are like that still those with coconut takes first place in my heart. This coconut ladoo is one such recipe. I have seen my grandma make it, but had never tried to make it till now. Finally this week I made this coconut ladoo with just 4 ingredients.
Yes just 4 ingredients, desiccated coconut, condensed milk, splash of vanilla extract and cardamom powder. Coconut in all forms is available in my pantry. I also always buy fresh coconut and freeze them, and that is cheaper than frozen coconut we buy from Indian store. If you buy coconut you can get both coconut water and coconut, and I enjoy the fresh coconut. For chutney and other traditional recipes I use fresh grated coconut. However to make thoran I prefer desiccated coconut. Also have coconut milk to make curries, especially like vada curry, and puddings.
In Hindu custom, coconut holds an important place. We believe that Lord Ganesha (my favorite) is the God who removes the hurdles in our efforts. Before starting any ceremony like marriage, naming or any other ceremony, there is custom of breaking coconut to propitiate Lord Ganesha so that he might remove the hurdles if any in your endeavors. By breaking the coconut's hard outer shell, you visualize the stead and difficult hurdles on your ways are broken. According these beliefs, coconut is more than food.
I had another reason to make this coconut ladoo. My condensed milk was going expire in a couple of weeks, after a short visit to my pantry my husband did investigation and found that I have bought lot of stuffs which I need to use it otherwise its expiry date is nearing soon. He gave me a boring lecture about why I am buying all these if there is no intention of making anything. Finally I told him, I will utilize everything sooner. So in order to finish a 14 oz can of condensed milk I made this coconut ladoo. It is really delicious, my little princess helped in me rolling the ladoo.
While reading about coconut brigadeiros the Brazilian treat, I came to know that it is also kind of distant relative of coconut ladoo, that will be next in do list to make it.
For the time being, here is delicious coconut ladoo, you can make it with 15 minutes. Make sure to use only desiccated coconut because freshly grated have more moisture.
Coconut ladoo
Ingredients
- 2 ½ cup Desiccated coconut medium
- 14 oz can of sweetened condensed milk
- 3 cardamom pods
- ¼ teaspoon vanilla extract
- Oil for brushing the hand
Instructions
- In thick bottomed pan add condensed milk and heat it in a slow medium fire.
- To this add 2 cups of desiccated coconut.
- Mix well and when it starts leaving from the sides, add vanilla extract and cardamom powder.
- When it slightly cool down brush your hands with oil and make a lemon sized balls out of it. Place it in a bowl with ½ cup of desiccated and rolls it twice so that coconut sticks uniformly.
- Keep in an air tight container and refrigerate it will good for a week.
