We are saying goodbye to 2014 today and ringing in the New Year 2015. Hope everybody planned well for New Year’s Eve party. I haven’t planned anything; we will be opening a bottle of champagne and tomorrow will make some dishes with black eyed peas as it is a southern tradition (USA) to bring good luck. How is your planning for New Year’s Eve party going? Today I am sharing a guest post on cranberry and cottage cheese parfait by Sujatha of spicentreats.

This being festive season, I wanted to make something that shows the colors and joy of this season. So, I’m sharing this simple and yummy parfait, Cranberry and Cottage Cheese parfait.
Delicious parfait with fresh cranberry and cheese
Ingredients
- ½ cup Indian Cottage Cheese / Paneer (you can find this Indian Grocers, for making it fresh see notes)
- ½ cup Plain Greek Yogurt
- 1 cup Fresh Cranberry
- 1 cup Sugar
- ¾ cup Water
- 1 teaspoon Vanilla Extract
Instructions
- Crumble the paneer.
- In a deep pan add water, sugar and cranberry and heat through so that sugar dissolves completely.
- Add the cranberry and mix well and bring it to a boil and then simmer until thickens and forms a jelly consistency and allow it to come to room temperature.
- Add crumbled paneer , vanilla extract, sugar and yogurt in a blender and give it a quick blitz.
- Arrange in layers in a serving bowl and refrigerate until ready to serve.
- I wanted to make it white and red, so made this variety. You can make your own variations with any seasonal fruit.
- Note
- For making paneer / Indian Cottage cheese,
- Bring 4 cups of whole milk to a gentle boil.
- Add a tablespoon of distilled vinegar / lemon juice.
- Mix gently, you will notice the milk curdling.
- Reduce the heat to simmer for 2 minutes or until you see pale yellow/ greenish kind of whey.
- Strain it with a chesses cloth over a strainer.
- Make a bundle with the cheese cloth and show the bundle in running water to eliminate the lemon or acid flavor.
- Strain well and crumble it.
