This simple and easy meal includes Hot and Sour Soup, Asian chopped salad, and Orange chicken with rice. These are delicious quick and easy recipes that beat takeout both in taste and budget. Also, everything gets ready in 30 minutes or less.
Hot and Sour Soup
It is from Sichuan Province, Hot and Sour Soup means "peppered vinegar soup" consists of a thickened broth, seasoned with white pepper and hot pepper, and vinegar. Usually meat-based, and often contains ingredients such, wood ear fungus, bamboo shoots, and tofu etc.
Since I am serving with InnovAsian orange chicken I made Hot and Sour Soup Hot and Sour Soup without any addition of meat. If you want, you can feel free to add it. You can get InnovAsian orange chicken from freezer section of local Walmart. It is a lightly battered tempura chicken breast and a citrusy orange sauce.

Ingredients
You need
Shitake mushroom: You can use dried or fresh shitake mushroom. I used dried ones after rehydrating make sure to use that mushroom-soaked water to Soup which will enhance the mushroom flavor.
Baby portobello mushrooms: If you can find wood ear fungus, then try to use that otherwise use Baby bella Mushroom.
Broth: use vegetable broth or chicken broth. I used vegetable broth as well as shitake mushroom-soaked water.
Corn starch: You need to make corn starch slurry which thickens the soup.
Carrots: it is optional, but it gives little crunch and color to the Hot and sour soup.
Egg: Addition of eggs give not only extra protein content but also increase the flavor.
Flavoring agents: Rice vinegar, Soy sauce, Chili garlic paste, sugar, pinch of salt, white pepper, toasted sesame seed oil.
Meat: if you use add chicken or pork to the soup.
Tofu: I used extra firm tofu.
Ginger: I used grated fresh ginger.
Green onion: It is used in both in soup and as garnish.
Points to Remember while making Hot and sour soup
You can make the soup in 5 simple step.

- Flavoring separtely
- Corn starch slurry is used to thicken the soutp
- Cook first two together then add corn starch slurry.
- While adding eggs in circular motion ensure the ribbon shaped strands of eggs in soup.
Asian Chopped Salad
This is simple Asian chopped salad made with cabbage, kale, purple cabbage, red bell pepper, green onions, carrots with Ginger-lemony dressing as well as toasted sesame seeds and almond seeds. You can use Green lettuce or Napa cabbage instead of Kale.
Best part of this Asian chopped salad is that it is made with crunchy vegetables. Also, simple lemony ginger dressing is simple with loads for fresh ginger and tangy lemon juice and rice wine vinegar.
Only ingredients list is long, making it is easy, simply mix everything in.
For chopping you can use mandoline food slicer that will speed the process.
If you want, you can use chopped snow peas or bean sprouts.
For extra crunch you can add toasted sesame seeds and almonds or even wonton noodles.
Jasmine rice: you can cook jasmine rice either in stove top, Instant Pot, or microwave according to manufacturer’s instruction.
You can make orange chicken according manufacturer’s instruction and serve with rice in bowl along with Hot and sour soup, and Asian chopped salad.

Ingredients
For Orange Chicken
- 18 oz/ 510g InnovAsian Orange Chicken
- Green onion for garnish optional
For Rice
- 1 cup Jasmine Rice
- 2 cup water
- ¼ teaspoon salt
- 1 teaspoon coconut oil
Hot and Sour Soup
- 4 cups vegetable broth
- ¾ cup shitake mushroom mushroom-soaked water
- 1 cup shiitake mushrooms sliced (dried one re hydrated)
- 1 cup Baby Bella mushroom chopped
- ¾ cup firm tofu drained, cut into cubes
- ¾ cup carrots cut into thin strips (optional)
- 1 teaspoon fresh ginger grated
- 2 tablespoons corn starch
- 1 large egg beaten
- 2 green onions sliced thin
- Flavoring
- 21/2 tablespoons low sodium soy sauce
- 1 teaspoon chili garlic sauce
- 2 ½ tablespoons rice vinegar
- ¼ teaspoon sugar
- Small pinch of salt optional
- ½ teaspoon White pepper
- ½ teaspoon toasted sesame seed oil
Asian Chopped Salad
Lemony Ginger Dressing
- 21/2 tablespoons soy sauce
- 3 ½ tablespoons vegetable oil
- 1 tablespoons rice wine vinegar
- 1 teaspoon Sesame seed oil
- Juice of half lemon
- 1 clove garlic minced
- ½ tablespoon ginger
- 1 teaspoon honey
- ½ teaspoon pepper
Salad
- 1 cup green cabbage
- 1 cup purple cabbage
- ¾ cup Red bell pepper
- ¼ cup Kale
- 1 cup carrots julienned
- 2 green onions
For Serving
- 1 tablespoon toasted sesame seeds
- 2 tablespoons almond toasted
Instructions
Orange Chicken
- Follow the Manufacturer’s instructions, and make it according your convenience, in oven, microwave or stove top.
Rice
- Cook Jasmine rice in stove-top with salt, coconut oil about 20 minutes to cook completely.
Hot and Sour Soup
- In 1 cup water soak 5 dried shitake mushroom for almost an hour. Once it is re-hydrated chopped it into thin slices and reserve the water in mushrooms are soaked aside.
- To a small bowl add the soy sauce, chili garlic sauce, rice vinegar, sugar, and salt.
- To a large soup pan add the vegetable stock, mushroom soaked water, both mushrooms, tofu, carrots ginger. Stir in the soy sauce mix and bring to a simmer.
- Mix the cornstarch with 3 tablespoons vegetable broth and stir into the soup. Simmer until thickened.
- While stirring, drizzle in the egg until incorporated.
- Finally add white pepper and sesame seed oil and garnish with green onions.
Asian Chopped Salad
- First make salad dressing with soy sauce, vegetable oil, lemon juice, ginger, garlic, rice wine vinegar, sesame seed oil and pepper
- Chop, cabbage, purple cabbage using mandoline. Make thin strips of red bell pepper and kale.
- In large bowl mix all the veggies, with salad dressing and ¾ th of toasted sesame seeds and almonds.
- When you are ready to serve add rest of the sesame seeds and almonds.
