Delicious Homemade rice milk with few ingredients , great with smoothies, cereals or drink from glass.
When I was sitting in my son ‘s pediatric allergist office, I saw a book about Eczema recipes. In that one rice is mentioned as major grain. Even though we eat rice 3 times a day, I have never had rice milk. Finally, I decide to make rice milk and tasted it. I also used the rice milk to make mango smoothie. Why rice milk?
Nowadays due to lots of people having allergy to cow milk, lactose intolerance, calorie concern and prevalence of hypercholesterolemia or a preference to vegan diets lots of consumers are choosing alternatives to cow milk. Plant-based milk alternatives are a rising trend. Though numerous types of innovative food beverages from plant sources are being exploited for cow milk alternative, many of these faces some/any type of technological issues, which could be either related to processing or preservation. Majority of these milk alternatives lack nutritional balance when compared to bovine milk, however they contain functionally active components with health promoting properties which attracts health conscious consumers.
Among the 5 categories of plant-based milk, rice milk comes in Cereal based milk.
cereal based: Oat milk, Rice milk, Corn milk, Spelt milk.
Legume based: Soymilk, Peanut milk, Lupin milk, Cowpea milk.
Nut based: Almond milk, Coconut milk, Hazelnut milk, Pistachio milk, Walnut milk.
Seed based: Sesame milk, Flax milk, Hemp milk, Sunflower milk.
Pseudo-cereal based: Quinoa milk, Teff milk, Amaranth milk.

Rice milk has active component of Phytosterols, especially β-sitosterol and γ-oryzanol and may lower cholesterol, hypertension, anti-inflammatory, anti-oxidative effects. Rice milk has pros alike and is the least allergenic of milk alternatives. However, it has cons such as being rich in sugar and unbalanced diet and lack of calcium.
How rice milk is usually made?
Rice milk is usually made with brown or white by processing rice with water and pressing them through the sieve. Rice milk is quite a bit thinner than most other alternatives and closest in consistency to fat-free cow’s milk. You can add sweeteners and flavors like vanilla extract to make it tastier.
Don’t use basmati rice as it is less starchy than the counter parts.
Use extra-long grain white or brown rice to make rice milk.
You can make with both cooked and uncooked rice. I found that uncooked white rice yields better tasting rice milk which looks like milk. Cooked rice will give more starchier component.
I made unsweetened rice milk, if you want you can make sweetened rice milk with honey, maple syrup or any other sweetener.
You can use rice milk in cereal, smoothies, straight from a glass or in rice puddings.
I found this recipe of making rice milk with out heating or boiling water. Only use warm water to soak the rice and then extract the milk from it.
Fresh rice milk should be stored in the fridge. If it turns sour or changed color means it is spoilt.
Cost of making fresh rice milk is way less than the rice milk you can get from supermarket. Only con is you must use it immediately while later can be stored for future use.
I have tried making mango smoothie, berry smoothie, chocolate smoothie with fresh rice milk. If you make rice milk let me know how it turned out for you.
Tips

How to make Rice milk
Equipment
- High speed blender, cheese cloth/ strainer
Materials
- ½ cup long grain white rice
- 3 ¼ cup water
- ½ teaspoon vanilla extract optional
- ⅛ teaspoon salt optional
Instructions
- First wash and soak the rice in 1 ¼ cup warm water (should not be boilinfor 2-3 hours. Then drain and process it in a blender with 2 ¾ cup water, vanilla extract until everything process well. Then strain it in a fine mesh strainer or a double layer cheese cloth. store in refrigerator until use.
- If you want you can blend it with 1 mango for mango rice milk smoothie, ½ cup berries for berry milk, and 2 tablespoon cocoa powder to chocolate rice milk.
- Enjoy.
