Idichakka Thoran/ Tender Jackfruit Stir Fry With Coconut

Jackfruit is one fruit I miss being here in US. Not because it is not available here, but it is exorbitantly expensive. So it is always out of my grocery shopping list. Both at my dad and mom’s house, in the backyard were huge jackfruit trees. In the summer there would be jackfruits hanging from top of to bottom. We have proverb in Malayalam” venamenkil chakka verilium kayakum” means nothing is impossible, if you desired something, it will be possible if you tried very hard. However, here in my backyard, every tree which I plant live their happy life only for a short period of time, then they will wither during the harsh winter. So this year I stopped planting my favorite moringa plant.
In India summer vacation starts after final exams in March. April, May will be vacation and in June schools reopens, we as young kids always looked forward to this. Usually we would visit our grandma (dad’s mom), she kept cans of fried jackfruit chips and other goodies for us. At that time, I am not found of curries with jackfruit, I would always get either chips or ripe fruit. Now I miss both jackfruit chips and grandma. 

Beginning of March when the jackfruit is tender, grandma used to make this thoran or stir fry with them. It was really curious to see how grandma prepared the fruit; she will cut with a knife smeared in coconut oil to prevent the latex like substance that oozes out from the fruit, from sticking to the knife. Then she would remove its thick skin, which is later consumed by  cows in our neighbor’s house. She would cut the flesh of jackfruit including its tender seeds, cutting into bite size pieces then cooked with turmeric and salt until they done. Then the fruit is mashed into thin strips with sharp ladle, seasoned with mustard seeds, urad dal (Split black gram skinless)  and curry leaves, spiced with garlic, pearl onion and chili powder, cumin powder and freshly grated coconut. Trust me this will taste great if you have some gravy and hot rice.

Tender jackfruit is rich in fiber and also taste like green plantain. You can find them in frozen isle of Indian store or in canned form in other Asian markets. Give it a try some time. Here goes the recipe.

What you need

Idichakka/ Tender jackfruit: 4 cup (chopped into bite size, I used frozen one)
Water: 3/4 cup
Salt: 1 teaspoon
Turmeric powder: ¼ teaspoon
Green chili: 1 no (I used Serrano pepper)
Pearl onions: 10 no ( chopped fine)
Urad dal/split black gram skinless: 1 tablespoon
Coconut oil: 1 tablespoon
Mustard seeds: ½ teaspoon
Red chilies: 2 no (halved into two)
Garlic: 2 cloves
Curry leaves: 2 sprig
Cumin powder: ½ teaspoon
Red chili powder: ¼ teaspoon
Coconut grated; ½ cup (I used desiccated one)

How I made

In medium sauce pot heat ¾ cup water and add thawed tender jackfruit pieces, turmeric powder and salt. Cover the pot with lid and cook for about 25 minutes or until it is done. Switch off the flame and set aside. 
When they are cooled enough to touch using a ladle cut the individual jackfruit pieces into thin strips and set aside. 
Heat the skillet and add coconut oil, mustard seeds, urad dal, halved red chilies and curry leaves. When mustard seeds starts popping add chopped pearl onion, garlic and green chili (I forgot add green chili) and fry until the onion become translucent and changes color, it took about 6 minutes.
Then add strips of jackfruit and cumin powder, red chili powder and coconut and mix everything and cook for 2 minutes to infuse the entire flavor. Switch off the flame and set aside. 

Enjoy with warm rice and gravy.

    I am loving those readymade packs of tender jackfruits.
    Fantastic.
    The stir fry would go really well with a goan seafood meal of prawn curry rice , fried prawns and a kokum curry.
    And hah, pickle too.
    There is a goan cake made with raw rice which i totally loveeee too.
    Its a sweet cake and i love it steamed. so moist and yummy.
