All purpose flour: 1 ½ cup
Sugar: ¾ cup
Banana: 1 no
Plantain: 1 no
Mango: 1 no (chopped into small cubes)
Eggs; 2 no (I used one whole egg and one egg white)
Pistachio: ⅓ cup (lightly toasted and crushed)
Milk: ¼ cup ( I used 2 %)
Canola oil: ⅓ cup
Baking powder: ¾ teaspoon
Baking soda: ¼ teaspoon
Powdered nutmeg: ¼ teaspoon
Salt: ½ teaspoon
Cardamom: 2 pods
Vanilla: 1 teaspoon

Olive oil is different kind, you can't use extra Virgina olive for frying. you need light to fry , further it is expensive, you need cheap olive oil to deep fry.

Thanks for the comment on Olive oil. I too was under the impression that EVOO is not suitable for frying, but it seems, it requires more than 500 to break up whereas the regular deep frying temperature is around 350-400. That makes it resusable and perfect for frying.
Personally I tried deepfrying once and found that the dish/fritters are less oily. I remember reusing the oil for saute but not in salad dressings. My cousin in US uses it for anything and everything. Here it may need a lot of convincing to use EVOO as a regular cooking oil.
May be there comes a time when ghee will be replaced with EVOO!!. Its scary as I will miss ghee but exciting as its good to be healthy 🙂

Looks great! Our bananas get old fast too. I just peel them, put them into a ziplock and free them. Then I can pull them out later for banana bread or muffins (or smoothies for my picky eater toddler). 🙂
