Protein-rich Mediterranean chickpea and egg salad with simple lemon dressing with the touch of sumac and Aleppo pepper and hard-boiled eggs.
Every New Year I try to keep some resolutions, but in the end I won’t I am not able to keep them as I wished. So, this year I want a change I decide to eat healthy food, means more salad and sourdough bread.
I made this Mediterranean chickpea and egg salad for our dinner. Yes, it is really filling one you can make it as breakfast, lunch or dinner. I used Great Day Farms Hard Boiled Eggs.
I love Mediterranean cuisine because of their unique spices, yes, I am a loving girl. I love to use Sumac, Zaatar, Aleppo pepper, dry mint etc. I like to grab all these during my visits to middle eastern store.
This protein-rich salad only requires a simple lemony dressing made with lemon juice, olive oil, sumac, Aleppo pepper and balsamic vinegar. This is no cook recipe if you use canned chickpeas otherwise only cooking includes chickpeas.
I found that Great Day Farms Hard-Boiled Eggs is a convenient and great tasting one at great value. As I don’t need to cook and then comes the dread thing of peeling the eggs. I always tend to lose half of my egg whites while peeling the shell. We are a family who loves to eat hard-boiled eggs than the other version of cooked eggs. This Mediterranean chickpea and egg salad are so easy to put together once you got the dressing ready, then comes mix in part. Make sure to mix eggs only last if you don’t want crushed eggs.
I like to slice them in round that way every bite has some eggs. If you want, you can slice eggs into 4 pieces. I used fresh herbs like cilantro instead of Parsley and mint.

Mediterranean Chickpea and Egg Salad
Ingredients
- For Dressing
- 1 teaspoon balsamic vinegar
- 1/ 2 of lemon juice
- ¼ cup olive oil
- 1 garlic minced
- 1 teaspoon sumac
- ½ teaspoon cumin
- ½ teaspoon Aleppo pepper
- ¼ teaspoon cayenne pepper
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ tablespoon mint
- ½ tablespoon cilantro / parsley
- For salad
- 1 can/ 15 oz cooked chickpeas washed and drained
- 4 Hard boiled eggs sliced in rounds I used Great day farms Hard boiled Eggs
- ½ of cucumber cubed
- ¼ cup red onions finely chopped
- 2 green onions finely chopped
- ½ cup red bell pepper chopped
- ½ tablespoon mint leaves chopped
- 1 tablespoon cilantro chopped
- Sumac and Aleppo pepper for sprinkle
Instructions
- First make the dressing using all the ingredients and set aside,
- In a large mixing bowl add chickpeas, bell pepper, red onions, green onions, cucumber and mint, cilantro leaves. Then finally add eggs and dressing and carefully mix in.
- Transfer to serving bowl with eggs on the top and sprinkle sumac and Aleppo pepper. Enjoy.
