Carrots are a good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants .
The presence of high concentrations of carotenoids, especially β-carotene in carrot roots make them to inhibit cancers, scavenge free radicals, and have anti-mutagenic and immuno-enhancers properties.
Carrots are comes with many colors some are yellow, white, orange, red, and purple.
Orange carrots get their bright color from beta carotene, an antioxidant that your body converts into vitamin A. Each cup of chopped carrots contains 52 calories
Carrots is vegetable you can incorporate with everything. When it incorporated into salad, soup or casserole delicious everything will make excellent meal.

You need following ingredients to make this
Carrots: I used baby carrots; you can use both baby carrots as well other carrots.
Chipotle powder: This will give a spicy kick to sweet carrot.
Maple syrup: Adds sweetness and helps to increase the caramelization .
Garlic powder: it will help brighten flavors.
Salt: For taste and flavor.
Olive oil : This add taste as well act as a binder to get spices to well coated.

Instructions
While is oven is pre-heating you can prepare the carrots.
In a large bowl, combine, olive oil, garlic powder, chipotle pepper and salt.
Add maple syrup, pepper. Mix everything and add carrots and toast well.
Roast at 400 F for 30 minutes. I like to use Pyrex bowl for mixing and baking sheet lined with non-stick aluminum foil.

a) Roasted carrots are good for your health?
Carrots when it eaten raw has high source of Vitamin A. After cooking
beta-carotene and phenolic acids levels increased in higher quantities. Cooking methods like boiling or steaming carrots can able to increase their cancer-fighting carotenoids beta-carotene, by 14 percent!
b) What is better way to cook the carrots?
Carrot tastes better once it is roast to perfection. Boiling the carrots will not increase the flavor, while roasting the caramelization of sweets in carrots makes it more delicious .
c) Do you peel the skin carrots before roasting?
I like to use the carrots after peeling the skin.
If you don't want to peel the skin, you can simply rub the skin to remove the impurities.
Variations
If you don’t want the spicy kick of chipotle pepper and want something mild go for paprika.
You can also use butter instead of olive oil which makes buttery carrots.
Spices you can add cumin, onion powder etc.
Adding herbs like parsley, cilantro will be good with carrots.
Storage
You can make ahead this refrigerate, reheat it in microwave or oven when you are ready to serve.
Tips for making perfect roasted spiced carrots
Make sure to coat each carrot with spice mixtures
You can roast them at 400 F (204 C) for 30 minutes.
There are variation in the oven roasting of various vegetables. I recommend the temperature of 400°F will be perfect for roasting the carrots. No matter what temp you chose, check doneness, and adjust as needed for your oven, and how thick is your carrots.
- 450°F: 17-20 minutes
- 425°F: 20 minutes
- 400°F: 30-40 minutes
- 375°F: 50-55 minutes
- 350°F: 55 minutes +
When you cook in low temperature carrots tends to be sweeter. If you use Olive oil go for 400 °F as they have smoke point around 375 to 405 F.

- 1 tablespoon vegetable oil
- ¼ teaspoon garlic
- ½ teaspoon chipotle pepper
- ¼ teaspoon pepper
- ¼ teaspoon salt
- ½ tablespoon maple syrup
- 1 bag 16 ounces baby carrots
- 1 t tablespoon chopped fresh parsley or cilantro
Instructions
- Pre-heat oven to 400 ° F . Line the rectangular pan 13x9x2 with foil and grease well.
- Mix oil, salt, chipotle pepper, maple syrup, garlic powder and pepper in a large bowl and then add carrots. Toss to coat well.
- Spread carrot in a single layer.
- Bake uncovered 35 to 40 minutes, stirring occasionally, until carrots are tender.
- Once carrots is done add chopped cilantro or parsley and enjoy
