Salad is more frequent dish in our house; my version is entirely different from my hubby’s .Yes he makes it more often with vegetables only. However when I make I try to add like extra work like roasted veggies. I love chickpea salad. Very simple form is just with chickpea and coconut. This time I o include watercress into the salad, as I wanted to incorporate B &W quality growers watercress into the recipe. Thus I made spiced roasted squash watercress salad.
This salad is really filling and is lightly spiced with cumin and chipotle pepper which perfectly match with sweet butternut squash and cooked chickpeas which blend very well with peppery watercress. Do you know watercress is a cruciferous plant grown for centuries yes from the time of Socrates and healthiest leafy vegetable on the planet.
If you don’t want to eat raw watercress you can sauté them. But I like it to eat raw as it goes well with any other veggies or proteins.
