How to make this Sugar free sourdough banana apple muffins ?
You need the following ingredients to make these muffins.
- Whole wheat flour: You can use white whole wheat flour too
- Rye flour: Dark rye flour is the best to make these muffins as it provides nutty taste.
- Sourdough starter/discard: I have used 100% hydration sourdough starter/discard.
- Dates: used medjool dates, you can use any dates for this recipe
- Apples: Pink lady apple is used in this recipe, you can use any baking apple
- Banana: Use any kind of banana
- Milk : Whole milk is used in this recipe, you can use any kind of milk
- Water: If you want you can replace with some more milk or butter milk
- Egg: You need to add extra large egg.
- Vanilla extract: Add flavor to the muffins.
- Cinnamon: Goes well with fruits and dates.
- Baking soda: Act as leavner in the muffin batter.

Instructions
In a large bowl add whole wheat flour, cinnamon, salt, and baking soda and set aside.
In a large bowl add egg, vegetable oil, sourdough starter, milk, water and vanilla extract mix everything.
To this add flour-spice, mashed banana, diced apples and chopped dates.
Dry ingredients includes, whole wheat flour, rye flour, cinnamon, salt, baking soda
Sourdough starter
Wet ingredients, egg, milk, water , sourdough starter and vanilla extract .
Mashed banana, apples and dates.
Mix the dry ingredients with wet ingredients.
Place into oven at 375 fahrenheit and bake
Mix everything and set aside.
Transfer the muffin batter to muffin tin and top with a few diced apples!
Bake and enjoy.
Substitutions
This is an oil free muffin, if you want you can add vegetable oil or coconut oil or melted butter.
Also adding pecans and walnuts will make it more protein rich.
Variations
You can add rasisins or cranberries instead of dates.
Adding fresh blueberries and carrots also good to make this sugar free sourdough muffins.
Storage
These muffins remain good for 1-2 days at room temperature and then refrigerate for 5 days . If you want to store more time freeze the muffins.
Top Tip
You need to use granny smith apple or pink lady apple to make these muffins. Instead of grating them use diced apple that will retain the shape and you can get bite while enjoying the muffins.

Sugar Free Sourdough Banana Apple Muffins
Ingredients
- 1 cup /148g Whole wheat flour
- ¼ cup /36g Rye flour
- 1 teaspoon /5g baking soda
- ¼ teaspoon /1g salt
- 4 no / 52g Dates pitted, chopped
- ¼ cup /50g sourdough starter
- ⅓ / 81 g milk
- 1 ½ nos 203g banana mashed
- ½ teaspoon vanilla extract
- ¼ cup water
- 1 red apple chopped
- 1 large egg
- ¼ teaspoon cinnamon
Instructions
- Preheat the oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin tin or line with paper muffin cups.
- Dice the apple and mash the banana and set aside. Chop the dates into small pieces and set aside.
- In a large bowl, stir together both 1 cup whole wheat flour and ¼ cup rye flour , baking soda cinnamon and salt. In a separate smaller bowl, mix the egg, milk, vanilla extrect , ¼ cup sourdough starter. Pour into the flour mixture.
- Then add mashed banana and diced apples( reserve 2tbsp aside for topping) and chopped dates into the bowl as well. Stir just until everything is blended. Spoon into the prepared muffin tin, filling the cups to the top.
- Bake for 13 minutes in the preheated oven, or until the tops of the muffins spring back when lightly pressed.
- Enjoy this gulit free muffins .
