Delicious and simple Tomato Watermelon Greek Salad get ready in 5 minutes. This is fruity twist to classic Greek Salad with watermelon instead of cucumber. Simple dressing to go with it.
I like to add some fruits to the salad to make it extraordinary. Usually my add on fruits are strawberries and blueberries. But this time I decided to go with watermelon. I saw this recipe in Diabetic Living magazine. Decided to give it a try. Thus, I made tomato watermelon Greek salad made.
In a Greek salad you have cucumber, olives, feta. Where this recipe space of cucumber is taken over by watermelon. Also, I used different color cherry tomatoes along with orange bell pepper. It's not an immediately obvious combination – watermelon, tomatoes, olives and feta – but one bite and will leave you convinced that this savory-sweet summer salad is something truly special. The astringent punch of the olives and feta provides a sophisticated counterpoint to the watery mellowness of the melon and tomatoes. This is great with bread, or any grilled meat or fish, it's an ideal summer lunch or supper.
If you have kalamata olives in hand, use that I don’t have it, so I used green olives. You need to eat this salad immediately if you keep it then it becomes watery. Fresh is best, also dressing doesn’t requires too many ingredients only olive oil, salt, pepper and red wine vinegar. This is ultimate summer in a bowl: salty and sweet, with a hint of acidity and creamy feta. Earlier I have tried Watermelon cucumber salad with blue cheese mustard sauce.
I didn’t add any red onion if you want you can also add that. If you add onion it becomes little savory. Otherwise this is slightly sweet and savory at every bite.
Green in this recipe includes romaine hearts which is sweet and crisper than romaine lettuce leaves. I only had fresh parsley and mint in my hand so added that. If you want, you can add fresh oregano also.
Simple yet refreshing watermelon salad which is colorful at the same time. Give it a try you are going to love it for sure.
Tomato Watermelon Greek Salad
Ingredients
- Dressing
- 1 tablespoon olive oil
- ¾ tablespoon red wine vinegar
- ⅛ teaspoon salt
- ¼ teaspoon pepper
- For salad
- 1 ½ cup romaine heart torn into pieces
- ½ cup cherry tomatoes
- ½ cup orange bell pepper
- 1 cup cubed watermelon
- 1 tablespoon fresh parsley
- ½ tablespoon mint
- 8 olives pitted
- ¼ cup feta
Instructions
- In a large bowl add the ingredients for the dressing and mix well.
- To this add torn pieces of romaine hearts, halved cherry tomatoes, chopped orange bell pepper, cubed watermelon, chopped parsley and mint. And give a good stir so that dressing will coat uniformly. When you read to serve add feta and pitted olives.
- You need to serve this salad immediately if you keep it will be liquid.
