What are benefits of using watermelon?
Watermelons consist of 92 percent water, so it is a great thirst quencher with loads of nutrients.
Each juicy watermelon bite has significant levels of vitamins A, B6 and C, lots of lycopene, antioxidants, and amino acids. There is even a modest amount of potassium. Plus, this quintessential summer snack is fat-free, exceptionally low in sodium and with only 40 calories per cup. And that makes Watermelon a superfood.
You can eat maximum of 4 cups of watermelon in a day, however if you are diabetic you need to check with the doctor as watermelon can increase the sugar level.
How to pick perfect sweet watermelon?
Pick, uniform round size one as they are sweet while elongate ones are watery.
Also look for yellow spots indicates that watermelon is ripening in the wine for some time
Heavier fruit is always juicer.
Looks for some scars that indicates a insect’s haven and tries to steal some sweetness from the watermelon.
Pick a dull color one as they are ripe, sweet, and ready to eat while shiny green one is underripe.
Once you have bought a good watermelon then try to make this watermelon cucumber salad
Points to remember
Always cut watermelon into 1-inch cubes this not only looks good in the salad and easy to bite.
You can use regular cucumber if using, try to remove the seeds. If you do not want to use regular cucumber use seedless cucumber.
I removed the skin of cucumber if you want you can leave it as it is.
I used micro plane to grate the ginger. Other wise use a blender to blend the salad dressing.
I have used lemon zest along with lemon juice, you can add lime instead of lemon.
I did not add any onion if you want use red onion and make sure to slice thinly.
I used crumbled feta you can use either crumbled feta or cubed feta.
Always mix everything just before serving as watermelon and cucumber tend to leave juices in presence of salt.
I used fresh mint you can use that if not a fan of mint leaves then use basil leaves instead.

Watermelon Cucumber Salad
Ingredients
- Dressing
- 1 ½ tablespoon Olive oil
- 1 tablespoon lemon juice
- ½ teaspoon lemon zest
- ¼ teaspoon pepper
- ¼ teaspoon salt
- ½ teaspoon ginger grated
- 2 tablespoon mint
- Salad
- 2 ½ cup watermelon cubed
- 1 cup cucumber sliced in half rounds
- ¼ cup feta cheese
Instructions
- In a large bowl add the ingredients for the dressing and mix well.
- To this add, cubed watermelon, cucumber. Feta if you are serving immediately. And give a good stir so that dressing will coat uniformly.
- If you are not serving immediately keep everything separately and mix it when you ready to serve. Otherwise it tends to release the water.
