Summer is here, and yes school year is going to end. Nowadays Grocery shopping is just going in and out of the store immediately. While shopping for my essentials in Kroger, I found a fairly good size watermelon for $3.99 dollars, it was on sale. Originally it is around $5.99. I bought it; next I was wanting to finish that by trying various dishes. I made with Watermelon Salsa, Watermelon Margarita, Watermelon limeade ,Watermelon Moscow Mule ,Watermelon Juice, Watermelon Cucumber salad with blue cheese , Tomato Watermelon Greek Salad , and Watermelon agua fresca
What is salsa?Salsa refers to spicy tomato and chili-based preparation like salsa roja, salsa picante or salsa cruda of Mexican cuisine. Usually served as sides to fish, rice, or tortilla chips.
Where in Spanish speaking world, there are hundreds of different kinds of salsas used in a variety of culinary applications.
Pico de gallo ("rooster's beak"), also known as salsa fresca ("fresh sauce"), salsa picada ("chopped sauce"), or salsa mexicana ("Mexican sauce"), is made with raw tomatoes, lime juice, chilies, onions, cilantro leaves, and other coarsely chopped raw ingredients.
The consistency of salsa can vary and is known for varying amount of liquid. Some recipes use the diced ingredients as is, while others process the ingredients into more of a purée before serving. Some salsas are cooked, which gives them a savory tomato flavor you will not find in the always fresh pico de gallo. Unlike salsa, which can take on a lot of different variations, the ingredients in pico de gallo do not really vary from recipe to recipe and are always fresh.
While traditional salsa has a thinner consistency with more liquid, pico de gallo is chunky, with each chopped ingredient distinctly visible. The watermelon salsa is a form of salsa fresca.
How I made watermelon salsa?
It is a sweet, savory, and crunchy salsa that accompanies any grilled meat. Try it with tortilla chips as a refreshing alternative to a tomato salsa.

Points to remember
Try to mix everything just before serving, otherwise watermelon and cucumber will release the juices that will make too much liquid.
I have deseeded jalapeno pepper if you want you can keep them intact to make it spicier.
I have sprinkled the chipotle pepper also if you want you can change that to red pepper flakes or smoked paprika.
I used little brown sugar you can use honey if you want as sweetener. This will bring out natural sweetness of the watermelon.
You need to roast the corn to get maximum flavor. Do not skip this step. This roasted corn adds extra layer of flavor to the salad.
This watermelon salsa goes well with grilled fish, meat or you can eat as such as with scoop as tortilla chips.
After all, Watermelon is a sweet and refreshing low calorie summer snack. It provides hydration and essential nutrients, vitamins, minerals, and antioxidants. Watermelon Salsa
Ingredients
- 2 cups seeded finely chopped watermelon
- ½ cup finely chopped peeled cucumber
- ¼ cup finely chopped red onion
- ½ cup finely chopped sweet red pepper
- 1 jalapeno pepper seeded and minced
- 2 tablespoon minced fresh cilantro
- ¼ cup lime juice
- 1 teaspoon brown sugar
- ¼ teaspoon salt
- ¼ teaspoon Chipotle pepper
Instructions
- In a large bowl, combine the watermelon, cucumber, onion, peppers and add lime juice, brown sugar, salt, and cilantro. Add chipotle pepper. Mix everything well.
- You can serve immediately if you want or you can serve after 1 hour of refrigeration.
