After School Banana bread

Delicious Banana bread made with mashed bananas touch of cinnamon and vanilla.

  • 1 ¾ cup all-purpose flour
  • 8 tbsp unsalted butter melted
  • 1 cup packed light brown sugar
  • 2 large eggs beaten
  • 1 ½ tsp pure vanilla extract
  • 4 to 5 ripe bananas mashed
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup chopped pecans
  • 2 tbsp sugar mix 1 tbsp turbinado sugar+ 1 tbsp granulated sugar


  • Pre-heat the oven to 350line parchment paper spray with 8x 8-inch pan.
  • In a medium bowl whisk together the flour, baking soda, cinnamon and salt.
  • In another bowl add butter, eggs, brown sugar and vanilla and mix well. To this add banana and mix well again.
  • To the wet ingredients as dry ingredients and mix well. Transfer to prepared pan and spread it evenly. Then sprinkle sugar -sugar mixtures and bake for about 45 to 50 minutes or until toothpick comes out clean.
  • Remove from the oven when it is completely cooled slice and enjoy with more butter, cream cheese or spread of your choice.
