  • 2 cups seeded finely chopped watermelon
  • 1/2 cup finely chopped peeled cucumber
  • 1/4 cup finely chopped red onion
  • ½ cup finely chopped sweet red pepper
  • 1 jalapeno pepper seeded and minced
  • 2 tablespoon minced fresh cilantro
  • ¼ cup lime juice
  • 1 teaspoon brown sugar
  • ¼ teaspoon salt
  • ¼ tsp Chipotle pepper


  • In a large bowl, combine the watermelon, cucumber, onion, peppers and add lime juice, brown sugar, salt, and cilantro. Add chipotle pepper. Mix everything well.
  • You can serve immediately if you want or you can serve after 1 hour of refrigeration.
