Ingredients
16ozPinto beans Make sure to drain and wash well with water to reduce to salt
½cupred bell pepper
½cupyellow pepper
½cupchopped tomato
½cupchopped red onion
1Serrano pepper chopped into rounds
1tablespoonchopped cilantro
1tablespoonchopped fresh oregano
For dressing
1 ½tablespoonolive oil
1 ½tablespoonred wine vinegar
¼teaspoonground cumin
¼teaspoongarlic powder
¼teaspoononion powder
¼teaspoonblack pepper
½teaspoonsalt or to taste
Instructions
Combine first 8 ingredients in large bowl. In another bowl add olive oil, red wine vinegar, cumin, garlic powder, onion powder, black pepper and salt and mix well.
Then add this olive oil mixture into the veggies and beans and mix well. Enjoy.
