Shrimp Fajitas

Delicious Shrimp Fajitas made with fresh shrimp, homemadetaco seasoning, veggies served with homemade tacos.

Ingredients

  • ½ lb Shrimp Peeled and deveined Uncooked
  • 1 ½ tbsp Taco seasoning
  • ½ of one lemon juice
  • ½ cup green bell pepper sliced
  • ½ cup yellow pepper sliced
  • ½ cup white onion sliced
  • ¼ teaspoon salt
  • 4 ½ tablespoon olive oil divided
  • ½ teaspoon coriander powder optional
  • 2 tablespoon cilantro chopped
  • To serve
  • 8 Tacos Homemade sourdough butter tortillas
  • 1 avocado sliced thin
  • Cotija cheese
  • Taco seasoning
  • 1 tablespoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¾ teaspoon paprika/Kashmiri chili powder
  • ¼ teaspoon dried oregano
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

Instructions

  • Taco Seasoning Mix
  • In a small bowl, mix chili powder, garlic powder, onion powder, oregano, paprika, cumin, salt and pepper. Store in an airtight container.
  • In a large bowl toss 4 tablespoon and 1 ½ tablespoon taco seasoning ,lemon juice and, ½ teaspoon coriander powder. And coat the shrimp well and set aside for 15-20 minutes
  • In a large nonstick skillet heat 2 teaspoon oil over medium-high heat. Add onion and peppers; cook and stir until crisp tender with salt . Remove from pan.
  • In same pan, heat remaining oil over medium-high heat. Add shrimp; cook and stir until shrimp turn pink. Return onion mixture to pan, heat through. Garnish with cilantro leaves.
  • Serve with tortillas, avocado, cotija cheese and cilantro.

Notes

You are using only 1 ½ tablespoon taco seasoning. Rest you can keep aside for future use.
