Sourdough Sweet Potato Loaf

Ingredients

  • 1 ¾ cups 200g sifted all-purpose flour
  • ½ cup 100g White sugar
  • ½ cup 100g Brown sugar
  • ½ cup 100g Sourdough starter
  • cup 62g Vegetable oil
  • 2 large eggs
  • 1 teaspoon Baking soda
  • ¾ teaspoon sweet potato spice mix * ½ teaspoon ground cardamom ¼ teaspoon ground ginger ½ teaspoon cinnamon ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • ¼ cup 57g Milk
  • 1 cup cooked and mashed sweet potatoes
  • ½ cup 53g chopped pecans

Instructions

  • Pre-heat the oven to 350 ℉ and line the baking tin with parchment paper or butter and flour the sides, and set aside.
  • In a large bowl, add flour, salt, baking and spice mix and mix everything and set aside.
  • In another bowl add vegetable oil, two eggs, brown sugar and granulated sugar, sweet potato puree, milk and combine everything and set aside.
  • To wet ingredients, add dry ingredients and combine everything, finally fold in pecans and transfer to prepared loaf tin
  • Top with some pecans if you want and bake at 350 ℉ for 60 minutes or until tooth pick comes out clean.
  • Once it cool down, slice and enjoy.
