- 1 ¾ cups 200g sifted all-purpose flour
- ½ cup 100g White sugar
- ½ cup 100g Brown sugar
- ½ cup 100g Sourdough starter
- ⅓ cup 62g Vegetable oil
- 2 large eggs
- 1 teaspoon Baking soda
- ¾ teaspoon sweet potato spice mix * ½ teaspoon ground cardamom ¼ teaspoon ground ginger ½ teaspoon cinnamon ¼ teaspoon nutmeg
- ¼ teaspoon salt
- ¼ cup 57g Milk
- 1 cup cooked and mashed sweet potatoes
- ½ cup 53g chopped pecans
Pre-heat the oven to 350 ℉ and line the baking tin with parchment paper or butter and flour the sides, and set aside.
In a large bowl, add flour, salt, baking and spice mix and mix everything and set aside.
In another bowl add vegetable oil, two eggs, brown sugar and granulated sugar, sweet potato puree, milk and combine everything and set aside.
To wet ingredients, add dry ingredients and combine everything, finally fold in pecans and transfer to prepared loaf tin
Top with some pecans if you want and bake at 350 ℉ for 60 minutes or until tooth pick comes out clean.
Once it cool down, slice and enjoy.
