This best soft peanut butter blossoms cookies are classic Christmas treat. It has peanut butter and touch of secret ingredient ginger cookies rolled in sugar with Hershey's kisses.

Ingredients

  • ¾ cups + 2 tbsp 117g all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 4 tablespoons unsalted butter softened
  • ¼ teaspoon ginger
  • ¼ cup 50g dark brown sugar
  • ½ cup 100g granulated sugar (divided)
  • ¼ cup creamy peanut butter
  • ½ of large egg room temperature
  • ½ teaspoon vanilla extract
  • 12 Hershey's Kisses unwrapped

Instructions

  • In a large bowl add all purpose flour, baking powder, ginger and salt and mix well .
  • In another bowl , beat butter, brown sugar, and ¼ cup granulated sugar until fluffy, about 2 minutes. Add peanut butter and beat until combined.
  • Add egg and vanilla and beat until combined. Reduce speed to low, add flour mixture in 2 additions, and mix until just combined. Cover bowl tightly with plastic wrap and refrigerate for 30 minutes.
  • Adjust oven rack to middle position and heat oven to 350 F. Line the baking sheet with parchment paper. Roll dough into 1-inch balls . Roll them into ¼ cup granulated sugar and space them 2 inches apart on prepared sheets.
  • Bake, 1 sheet at a time, until cookies are just set and beginning to crack, 9 to 11 minutes. Working quickly, remove sheet from oven and place 1 candy in center of each cookie, pressing down firmly.
  • Return sheet back to the oven and bake until cookies are light golden, about 2 minutes longer. Let cookies cool on sheet for 5 minutes, then transfer to wire rack. Let cookies cool completely before serving.

Notes

  • Serve:  These cookies will stay fresh for 5 days at room temperature store it in an airtight container. If you want, you can add a piece of bread in the container with these cookies which makes cookies extra moist.
  • Refrigerator: You can store the peanut blossom cookies in airtight container for up to two weeks. But their freshness  can loose on time.
  • Freezer:  For long time storage, freeze these cookies once the cookies are  cooled completely, and layer them in an airtight container. If you freeze them warm, the kisses may fall off when you defrost them. If this happens you can  just use either peanut butter or melted chocolate to stick the kiss back on.
