Grilled Teriyaki Shrimp and Grilled tofu skewers

Ingredients

  • For Grilled tofu skewers
  • 8 oz extra firm tofu dried and cut it into 2 inch pieces
  • ½ bell pepper 2 inch pieces
  • ½ onion cut in 2 inch pieces
  • ½ red bell pepper cut into 2 inch pieces
  • 1 zucchini cut into 2 inch pieces
  • Marinade for Grilled tofu skewers
  • 1 tablespoon ginger and garlic
  • cup Kikkoman® Soy Sauce
  • 1 teaspoon red chili paste /flakes
  • 1 teaspoon pepper
  • 1 teaspoon sugar
  • For Teriyaki shrimp
  • 16 Jumbo Gulf shrimp peeled and deveined
  • 2 cup pineapple cubed and 2 inch pieces
  • Teriyaki Marinade
  • 1 tablespoon ginger and garlic
  • cup Kikkoman® Teriyaki Marinade
  • 1 teaspoon red chili paste /flakes
  • 1 teaspoon pepper

Instructions

  • First make the marinade with all ingredients and wash and dry the tofu by squeezing the water out and pat with kitchen towel.
  • Then add tofu and vegetables into the marinade and marinate for about 4hours
  • Then skewer tofu, bell peppers, and zucchini in a pattern and keep aside.
  • Preheat your grill. Then lay the tofu and vegetable skewers on the grill for about 3minutes and turn the other side for 3minutes until they are lightly charred. I used charcoal grill.
  • For Teriyaki shrimp make marinade and marinate the peeled and deveined shrimp for about 5 hours. Then arrange them in metal skewers with Shrimp and pineapple alternately and grill them in a pre-heated charcoal grill until for about 3 minute each side or until shrimp become curled up and becomes pink.
  • Serve with some lime wedges and enjoy!
