Pumpkin Apple Sourdough Loaf

Pumpkin Apple Sourdough loaf is perfect blend of pumpkin, spices, the sweetness of fresh apples, and the tang of sourdough starter.

Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 cup pumpkin puree
  • ½ cup sourdough starter active or discard
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • ½ cup vegetable oil
  • 1 ½ tablespoon butter
  • ¼ cup milk
  • 2 eggs
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon pumpkin spice
  • 1 cup chopped apple
  • 2 tablespoon Pepitas

Instructions

  • Pre-heat oven to 350℉. Line a loaf tin with parchment paper and butter the side.
  • In a medium bowl add all purpose flour, salt, baking soda and pumpkin pie spice and mix well
  • Large bowl add brown sugar, granulated sugar, vegetable oil and softend butter and eggs and mix well and set aside.
  • Then add milk and sourdough starter and mix well.
  • Add pumpkin puree, mix well, then add dry ingredients and mix until just combined.
  • Fold in apple pieces and transfer to prepared loaf tin.
  • Top with some apple pieces and pepitas on the top and bake at 350℉ for 55 minutes or until toothpick comes out clean.
