- 1 ¾ cups all-purpose flour
- 1 cup pumpkin puree
- ½ cup sourdough starter active or discard
- ½ cup brown sugar
- ¼ cup granulated sugar
- ½ cup vegetable oil
- 1 ½ tablespoon butter
- ¼ cup milk
- 2 eggs
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon pumpkin spice
- 1 cup chopped apple
- 2 tablespoon Pepitas
Pre-heat oven to 350℉. Line a loaf tin with parchment paper and butter the side.
In a medium bowl add all purpose flour, salt, baking soda and pumpkin pie spice and mix well
Large bowl add brown sugar, granulated sugar, vegetable oil and softend butter and eggs and mix well and set aside.
Then add milk and sourdough starter and mix well.
Add pumpkin puree, mix well, then add dry ingredients and mix until just combined.
Fold in apple pieces and transfer to prepared loaf tin.
Top with some apple pieces and pepitas on the top and bake at 350℉ for 55 minutes or until toothpick comes out clean.
