Ingredients
You need the following ingredients to make this delicious Pumpkin Apple Sourdough loaf
- All-purpose flour: Used unbleached all purpose flour
- Pumpkin puree
- Sourdough starter (active or discard): I used 100% hydration
- Brown sugar
- Granulated sugar
- Oil or melted butter
- Eggs
- Baking soda
- Pumpkin spice: I used homemade pumpkin spice
- Salt
- Apple: I used pink lady apple you can use gala or any crisp apple.
- Pepitas

Instructions for Pumpkin Apple sourdough loaf
First, combine the dry ingredients: flour, baking soda, salt, and pumpkin pie spice. Then, mix the wet ingredients: brown sugar, granulated sugar, oil, butter, eggs, pumpkin puree, and chopped apple pieces. Finally, top with extra apple pieces and pepitas.

Variations to Pumpkin Apple Sourdough loaf
These are few variation to the pumpkin apple sourdough loaf.
- Apple Pumpkin Streusel Bread
Make a crumb topping with butter, flour, brown sugar, and cinnamon and sprinkle over the loaf before baking.

Add chocolate chips to the batter and bake as instructed. The chocolate adds an extra touch to this bread.
Storage
This pumpkin apple sourdough loaf can be stored at room temperature in an airtight container and kept fresh for 3-4 days. If you store it in the refrigerator, it will remain fresh for 1 week. For long term storage .Wrap slices individually and keep in the freezer for 3 months.
Can I use sourdough discard?
Absolutely! The recipe is perfect with sourdough discard or starter.

Other than pink lady apples, you can use other sweet apples such as Honeycrisp, Fuji, Gala, and Pink Lady are best used in this recipe.

Pumpkin Apple Sourdough Loaf
Ingredients
- 1 ¾ cups all-purpose flour
- 1 cup pumpkin puree
- ½ cup sourdough starter active or discard
- ½ cup brown sugar
- ¼ cup granulated sugar
- ½ cup vegetable oil
- 1 ½ tablespoon butter
- ¼ cup milk
- 2 eggs
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon pumpkin spice
- 1 cup chopped apple
- 2 tablespoon Pepitas
Instructions
- Pre-heat oven to 350℉. Line a loaf tin with parchment paper and butter the side.
- In a medium bowl add all purpose flour, salt, baking soda and pumpkin pie spice and mix well
- Large bowl add brown sugar, granulated sugar, vegetable oil and softend butter and eggs and mix well and set aside.
- Then add milk and sourdough starter and mix well.
- Add pumpkin puree, mix well, then add dry ingredients and mix until just combined.
- Fold in apple pieces and transfer to prepared loaf tin.
- Top with some apple pieces and pepitas on the top and bake at 350℉ for 55 minutes or until toothpick comes out clean.
