Roasted spiced carrots

Ingredients

  • 1 tablespoon vegetable oil
  • ¼ teaspoon garlic
  • ½ teaspoon chipotle pepper
  • ¼ teaspoon pepper
  • ¼ teaspoon salt
  • ½ tablespoon maple syrup
  • 1 bag 16 ounces baby carrots
  • 1 t tablespoon chopped fresh parsley or cilantro

Instructions

  • Pre-heat oven to 400 ° F . Line the rectangular pan 13x9x2 with foil and grease well.
  • Mix oil, salt, chipotle pepper, maple syrup, garlic powder and pepper in a large bowl and then add carrots. Toss to coat well.
  • Spread carrot in a single layer.
  • Bake uncovered 35 to 40 minutes, stirring occasionally, until carrots are tender.
  • Once carrots is done add chopped cilantro or parsley and enjoy
