Delicious and simple Greek Salad get ready in 5 minutes. This is fruity twist to classic Greek Salad with watermelon instead of cucumber. Simple dressing to go with it.

- Dressing
- 1 tablespoon olive oil
- ¾ tablespoon red wine vinegar
- ⅛ teaspoon salt
- ¼ teaspoon pepper
- For salad
- 1 ½ cup romaine heart torn into pieces
- ½ cup cherry tomatoes
- ½ cup orange bell pepper
- 1 cup cubed watermelon
- 1 tablespoon fresh parsley
- ½ tablespoon mint
- 8 olives pitted
- ¼ cup feta
In a large bowl add the ingredients for the dressing and mix well.
To this add torn pieces of romaine hearts, halved cherry tomatoes, chopped orange bell pepper, cubed watermelon, chopped parsley and mint. And give a good stir so that dressing will coat uniformly. When you read to serve add feta and pitted olives.
You need to serve this salad immediately if you keep it will be liquid.
