Watermelon Cucumber Salad

Delicious , summery, refreshing, beautiful watermelon-cucumber salad with feta  is full of sliced cucumbers, crumbled feta cheese and mint, combined together with simple lemon dressing with zing of ginger in the background.

Ingredients

  • Dressing
  • 1 ½ tablespoon Olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon lemon zest
  • ¼ teaspoon pepper
  • ¼ teaspoon salt
  • ½ teaspoon ginger grated
  • 2 tablespoon mint
  • Salad
  • 2 ½ cup watermelon cubed
  • 1 cup cucumber sliced in half rounds
  • ¼ cup feta cheese

Instructions

  • In a large bowl add the ingredients for the dressing and mix well.
  • To this add, cubed watermelon, cucumber. Feta if you are serving immediately. And give a good stir so that dressing will coat uniformly.
  • If you are not serving immediately keep everything separately and mix it when you ready to serve. Otherwise it tends to release the water.
