- 2 cups seeded finely chopped watermelon
- ½ cup finely chopped peeled cucumber
- ¼ cup finely chopped red onion
- ½ cup finely chopped sweet red pepper
- 1 jalapeno pepper seeded and minced
- 2 tablespoon minced fresh cilantro
- ¼ cup lime juice
- 1 teaspoon brown sugar
- ¼ teaspoon salt
- ¼ teaspoon Chipotle pepper
In a large bowl, combine the watermelon, cucumber, onion, peppers and add lime juice, brown sugar, salt, and cilantro. Add chipotle pepper. Mix everything well.
You can serve immediately if you want or you can serve after 1 hour of refrigeration.
