Yes it is getting chilly here; it started getting cold right from the Halloween night. November started winter is here, still in Houston you can feel the winter but not as north coast. Only problem is my trees and plants are going to die as the weather gets more and more chilly. Especially my moringa plant that try to flower and makes fruit will lose the leaves and die. But silver lining is that it will come back during summer. When weather is cooler, first thing in mind for a warm up is a soup, this Sopa de fideo or Mexican noodle soup is delicious that I made it for our lunch.
Soupa de Fideo is made with Fideo noodles which are similar to Vermicelli. Barilla makes Fideo Cut Spaghetti however in Houston store I can’t find them. So I used Barilla Angel hair pasta for this soup. I bought them from Wal-Mart. This Sopa de fideo is traditional dish in Mexican cuisine usually served as starter to a meal. It is tomato based soup. It is really easy dish; you need only 25 minutes to get it ready.
In Indian cuisine, we fry vermicelli and add it to milk to make dessert, here in this recipe, vermicelli noodles / angel hair pasta noodles are fried in oil until it turn brown in color. For making this soup, first cut the angel hair pasta into 1 inch pieces and then fry them.
If you want it more authentic fry them in lard. History does say that pasta came to Europe with Marco Polo from China, and the technique of stir-frying dry noodles could be an Arabic contribution to the Mexican culture via Spain. Then these fried noodles are cooked in a tomato-onion- garlic sauce with spices. Frying prevent the pasta from sticking to each other which makes the soup gooey. Spices include oregano, cumin and pepper. If you want it spicier add some chili flakes/ jalapenos / chipotle or some hot sauce.
You can also make sopa de fideo with chicken; however I made a vegetarian version of it, with vegetable broth. This is really comfort dish which grandma and moms have made for years. Yes this one is going to stay with me for long time. If you are in a hurry and want to make something delicious in less than 30 minutes try this sopa de fideo recipe, you don’t need to make spaghetti recipes alone with Angel hair pasta, try this Hispanic traditional dish. It is really satisfying also you can incorporate your favorite veggies if you want.
My two kids loved this soup very much, they enjoyed with addition of little tomato ketchup. I think they can’t imagine any dish without tomato ketchup. My hubby told me that this is best soup he had for long time. We enjoyed this traditional Mexican fare thoroughly. My daughter told me to make it more often she like this soupa (that is what she calls it) a lot.

Delicious noodle soup made with angel hair pasta great way to start your dinner or lunch.
Ingredients
- 4 tomatoes cut into large chunks
- ½ medium white onion (1 cups), cut into large chunks
- 1 clove of garlic
- 2 tablespoon Olive oil
- 4 ounce/1 ¼ cups angel hair noodles cut into 1-inch pieces
- 3 cup vegetable broth (I used homemade
- ¾ teaspoon salt or to taste
- ½ teaspoon pepper
- 1 teaspoon oregano
- 1 ¼ teaspoon cumin
- 1 tablespoon of cilantro
Instructions
- In a blender puree the tomatoes, onions, garlic into a fine sauce.
- Strain and set aside.
- In a skillet heat oil
- and fry the cut angel hair pasta
- until it becomes brown in color it takes about 4 minutes in medium flame and set aside.
- In a large saucepan add tomato –onion- garlic sauce, fried noodles, salt, spices, vegetable broth and cook over medium heat for 12-15 minutes until noodles are tender.
- Add chopped cilantro to soup and switch of the flame.
- Garnish with optional toppings if desired. Like lemon wedge, chili flakes, avocado etc.
- Note: You can skip oregano and cumin, if you don't like it.

I have been toying with the idea of making spaghetti or angel hair pasta to shorter strands (just like what you hv done here). However, in many Asian (Chinese) cooking, it is not a good idea to break long noodle strands as it is believed that long noodle strands symbolizes longevity...just sharing.
