You need the following ingredients to make these delicious muffins.

- All-purpose flour: Unbleached all-purpose flour is used here.
- Brown sugar: Dark or light brown sugar will be great. I used dark brown sugar.
- Butter: Melted butter
- Sourdough starter / discard: 100% hydration ( 1: 1: 1) sourdough starter is used in this recipe. You can use any flour starter.
- Butter milk: You can use both storebought or homemade buttermilk.
- Apple pie spice: Apple pie spice adds more flavors so don’t skip this .
- Vanilla extract: I used original vanilla extract you can use vanilla beans or paste too.
- Baking soda: Baking soda act as leavening agent in this recipe.
- Granny smith apple: Green granny smith is good for this recipe as it retains the shapes even after baking.
- For streusel topping
- Butter :
- All purpose flour
- Brown sugar
- Apple pie spice

Instructions to make this sourdough apple pie muffins.
In a large bowl add flour, apple pie spice, salt and baking powder and set aside.
Dry ingredients with flour, baking soda, apple pie spice and salt
Melted butter, egg, buttermilk, sourodugh starter, vanilla extract
Brown sugar
Mufffin batter ready to bake
Add dry ingredients to wet ingredients along with diced apple
Streusel topping with flour, brown sugar, apple pie spice and melted butter.
In large bowl add egg, melted butter, sourdough starter, buttermilk, and vanilla extract mix everything.
To this add flour-spice mix and diced apples.
Mix everything and set aside.
In a small bowl make streusel with melted butter, flour and brown sugar and apple pie spice and combine everything.
Transfer the muffin batter to muffin tin and top with streusel topping.
Bake and enjoy.

You need to use granny smith apple or pink lady apple to make these muffins. Instead of grating them use diced apple that will retain the shape and you can get bite while enjoying the muffins.

- 2 ¼ cups / 270g all-purpose flour
- 1 teaspoon /5g baking soda.
- ½ teaspoon salt
- ½ cup / 105g sourdough discard
- 1 egg
- ½ cup / 146g buttermilk
- ½ cup butter melted ( reserve 2 tablespoon for streusel )
- 1 teaspoon vanilla extract
- 1 cup / 200g packed brown sugar.
- 2 cups diced apples.
- 1 teaspoon apple pie spice
- For streusel
- ¼ cup / 50g packed brown sugar.
- ⅓ cup all-purpose flour
- ¼ teaspoon apple pie spice
- 2 tablespoons butter melted.
Instructions
- Preheat the oven to 375 degrees F (190 degrees C). Grease a 16-cup muffin tin or line with paper muffin cups.
- In a large bowl, stir together 2 ¼ cups flour, baking soda and salt. In a separate smaller bowl, mix together the egg, buttermilk, ½ cup melted butter ( reserve 2 tablespoon for streusel topping), vanilla , ½ cup sourdough starter and 1 ½ cups of brown sugar until sugar have dissolved. Pour into the flour mixture and sprinkle the diced apple into the bowl as well. Stir just until everything is blended. Spoon into the prepared muffin tin, filling the cups to the top.
- In a small bowl, stir together ¼ cup of brown sugar, ⅓ cup flour and ¼ teaspoon apple pie spice. Drizzle in 2 tablespoons of melted butter while tossing with a fork until well blended. Sprinkle this over the tops of the muffins.
- Bake for 15 minutes in the preheated oven, or until the tops of the muffins spring back when lightly pressed.
