Chocolate Chunk Cookies

  Last Thursday I left my prince in my hubby’s care and went to pick my daughter from her school, as hubby came home for his lunch. After coming back I saw my kitchen was in a real mess. My hubby was eating his lunch in our morning area and my prince was eating his yogurt in high chair, he was fully drenched with yogurt, in fact, table, everywhere. He is having fun time. I asked my hubby did you give him anything, he told me don’t you see he is eating yogurt. I told him he is not eating, he is making a mess. Hubby told me, if I am letting him to do what he wants so I can’t eat my lunch peacefully. I told him you are taking care of kids just like your father did.
Yes my mother-in-law used to say, if she leave three kids, my hubby and two sisters in father-in-law’s care to do the errands. He will gave them a big bowl of water and let the kids to splash or do whatever they want. So that kids won’t disturb him.  My hubby is religiously following his father when it comes to taking care of kids.
I was not into any cookies, until my daughter started asking me for them. She comes back from her school and asks me for chocolate cookies and cake. If I am making a cake it should be with frosting and looks like a birthday cake, she wants to sing happy birthday day song before cutting the cake. As her birthday is in two months, I thought I can make these cookies. If it is anything with chocolate then she will love it. I got this recipe from our local grocery HEB lifestyle magazine. I liked it very much and wanted to try. While taking out all the ingredients from the pantry for making the cookies, I recognized I don’t have chocolate chips in my hand.  But I had some semi sweet chocolate bars, so I decided to use them as chocolate chunk cookies.
Original recipes call for butter and canola oil; but I had some margarine in hand, so made use of it. I made cookies with combo of butter and margarine, and it has oat meal, brown sugar and granulated sugar. I also used about 4 oz of semi sweet chocolate bars.   If you don’t want in your cookies to use margarine skip it and use butter alone or butter canola oil combo.  Cookies turned out be delicious even my 13thmonth old was happy to munch on them. I think if you want it chocolatier add extra 1 oz of chocolate
  Here comes the recipe.
It is keeper recipe, and I have made it twice, second time I made with spelt flour and chocolate chips, that too turned out be delicious. Hard to stop with one, so try it for yourself and it is a kid approved one. This recipe goes in hand with another killer chocolate recipe I had blogged about earlier.

Chocolate Chunk Cookies
Recipe adapted from here Preparation time: 10 minutes
Chilling time: 30 minutes
Bake time: 12 minutes
Yield: 24

Ingredients
1 ¼ cup/175 g all-purpose flour
½ tsp./2g baking soda
¼ tsp./1g salt
¼ cup/62g. Unsalted butter
3 Tbsp./41g Margarine
½ cup less than 1 tablespoon /86 g sugar or sugar substitute equivalent
½ cup/89 g brown sugar
1 jumbo egg
1 ½ tsp. vanilla extract
¾ cup/68g Old Fashioned Rolled Oats
4oz semisweet chocolate bars

Instructions

Preheat oven to 350°F. Line 2 baking sheets with parchment paper. Set aside.

In a mixing bowl, combine flour, baking soda, and salt; set aside.

In a large bowl, beat together margarine, butter, and sugars with an electric mixer. Add egg and vanilla, beating until well combined. Fold in oats, flour mixture, and chocolate chunks. Cover and refrigerate dough 30 minutes.

Place rounded tablespoon full of dough 2 inches apart on prepared baking sheets.

Bake, 12 minutes or until cookies are set and golden brown. Cool 5 minutes on sheets; transfer to a wire rack to cool completely.
